Home cooking has become the norm while restaurants remain closed so Harron and Tom Jones are helping combat cooking fatigue with a vegan recipe tutorial to provide some fresh inspiration.

Chef Tom’s healthy vegan ramen dish

  • 2 garlic cloves
  • Half a red pepper, chopped into fine matchsticks
  • Handful mangetout, finely sliced
  • Half red onion, finely chopped
  • Thumb-sized piece ginger, sliced
  • 1 chilli sliced
  • 450ml quality vegetable stock
  • 200g firm tofu, cut into chunky cubes
  • 1 handful spinach, chopped
  • 1 tbsp olive oil
  • 100g (2 x nests) rice noodles
  • 1 handful coriander, chopped
  • 2 spring onions, finely sliced, white and green parts kept separate
  • Handful spring greens
  • 200ml coconut milk
  • 1 lime
  • 1 carrot, peeled and cut into fine slices
  • Sesame oil
  • Chilli sauce
  • Coriander, chopped
  • 1 tsp turmeric
  • Sprinkle of sesame seeds
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 star anise
  • Pinch of salt

Method

  • Add vegetable stock to the pan with the chilli, garlic, spring onions, star anise and all the dried spices. Let it simmer to infuse the flavours.
  • Heat sesame oil in a separate pan and add the onions, carrots and peppers. Cook until they have softened.
  • Add coriander to the broth and continue to simmer.
  • Season the vegetables with a good pinch of salt.
  • Add the mangetout to the vegetables which should be sizzling by now.
  • Heat a pan and add the tofu and the chilli sauce. Keep coating the tofu in the chilli sauce until soft and squidgy. Finish with the sesame seeds.
  • Take the broth off the stove and add the coconut milk.
  • Put the noodles in a serving bowl and add the spring greens and spinach. Add the softened peppers, onions and carrots.
  • Strain the broth with a sieve over the bowl covering the noodles. Stir. The heat from the broth will cook the noodles.
  • Add the tofu. To garnish, add a squeeze of lime, chopped coriander and spring onions.
